Easy, No-Churn Ice Cream: Baileys Cookies & Cream

HEY FRIENDS!

We’re back in the kitchen today with an easy Summer treat! I first saw this trend all over Pinterest, then it slowly made it’s way to Instagram and I knew it was something I had to try. After all, I was already baking a few desserts so why not try ice-cream? Especially when I saw that it only needed three ingredients and had no churning involved. If you know me, you know I like quick and easy cooking techniques. Funny enough, I also tried making ice-cream before using a churning machine (assuming that’s what it’s called). If you’re from the Caribbean you should know what I’m referring to, when you see people selling homemade ice-cream at the different fairs. It was actually at a fair where I decided to try it out, lol.

Since making it the first time, I decided to experiment with the recipe a few more times trying other flavours (Pina Colada & Strawberry). They didn’t come out as expected, so I think I’ll have to stick to this base option and add-in substitutes as I go. I first saw someone on Instagram add Baileys to her recipe and I didn’t even have to try it to know it’d be good. Given the fact that alcohol doesn’t freeze, this ice-cream was a nice soft serve consistency. All the information you need to make this dessert can be found below. Enjoy!
