Y’all been getting a lot of inspirational and natural hair posts, but I still gotta sneak in the cooking posts. There would have also been some ‘eat outs’ posts if I’d only remember to snap a few pictures before I actually dig in *my apologies*. So, we’re finally getting off of this long easter weekend and I decided to whip up something to take for lunch the next day, as well as to last the remainder of the week. Hope you enjoy this quick and easy recipe; let me know if you decide to try it!
Glazed Honey Lemon Chicken
Ingredients
Chicken Thighs
1 tbsp Italian Seasoning
2 cloves Garlic
1/8 cup Olive Oil
1/8 cup Honey
*Lemon Juice
1 tbsp Soy Sauce
*I used fresh lemons, so of course I guesstimated what should have been 1/4 cup
Season chicken night before and let them cool down before cooking.
Preheat oven to 350 degrees.
In a small bowl whisk together olive oil, honey, lemon juice, soy sauce, minced garlic and Italian seasoning.
Layer chicken in a baking dish and pour mixture over.
Cover with foil and bake for 1 hour. Take off foil and let chicken brown for an extra 15 – 20 minutes.
My chicken of choice were chicken thighs as that’s what I like, but feel free to use any of your choice. I have a feeling this would be great with whole chicken.
