In My Kitchen: Creamy Alfredo Seafood Pasta

For some reason or another my father refers to me as the pasta queen, therefore any time pasta is on our menu I should be the chef. To be honest, cooking is always a hit or (near) miss with me because I’m not following a recipe and it’s all in my head. With that being said no two days are alike, of course they are still bomb but something is different. Either way I’m still eating!

So I came home from work to meet my mother already prepping and then she decides to hand everything over to me and my sous chef (my little sister). Without further ado, let’s get into it!

Seafood Pasta

Ingredients

Salmon
1/2 lb Shrimp
A half of Lobster
Spaghetti (Your choice of pasta)
2 cups Broccoli
1 Carrot
1/4 cup chopped Mushroom
1/4 cup chopped Onion
3 cloves Garlic
2 tbsp Italian Seasoning
1 tbsp Black Pepper
Thyme
4 tbsp Garlic Butter
1 1/2 cup Heavy Cream
1/4 cup Parmesan Cheese
1 cup Monterey Jack Cheese
White wine

*As I said before I don’t follow any recipes I just go with my gut feelings, so these amounts listed are rough estimates.

 

 

1/ Boil your pasta to your liking then capture a cup of the “pasta water” before setting aside.

2/ All your meats should already be defrosted and seasoned. I popped the salmon into the oven for 10 minutes while I went to work on the other ingredients. (At the end I used my fork and simply shredded the salmon into pieces.)

3/ I added butter to my pan, then onions, broccoli, carrots and mushrooms. When those were tender I took them out and placed on a plate.

4/ Next was the shrimp, with garlic butter in the pan and some chopped garlic I sautรฉed the shrimp until they were slightly pink. Remove from pan and set aside.

5/ Sauce time! I first poured in the heavy cream then added the grated cheese, whisking as I go. I proceeded to add the “pasta water” along with the wine to loosen it up. Continuing mixing I added some Italian seasoning and black pepper. More cheese, cream and seasoning were added until I was satisfied. (I probably won’t use Monterey Jack cheese again, but it was all I had on hand).

6/ Add everything into the sauce and mix together. Sprinkle some parsley on top and you’re done!

I really do enjoy a good pasta dish and have no problems eating it on repeated occasions.
