So today I decided to make Banana Nut Muffins, minus the nuts! However, they did not come out as expected. Nevertheless I’m going to continue trying until they’re as perfect as Otis Spunkmeyer’s. Therefore, below is the recipe i used, and if anyone has any tips or suggestions it wouldbe greatly appreciated! Oh, wait! I forgot to tell y’all what was wrong with mine. In the first place they were white, which i think was a result of my use of white sugar. Also they were jumbo or had a big muffin top. Maybe i need a bigger pan?

  • 2 cups flour
  • 1 Teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 3 overripe bananas
  • 1 egg
  • 1/3 cup dark brown sugar * which I didn’t have*
  • 1/4 cup canola oil
  • 1/4 cup pecans/walnuts *which I chose to omit*

If anyone has anything different or a new recipe in which they have tried, and got perfect muffins I would love that.
